You could have Vanderjagt go against San Diego and only score 5 points because he just gets a bunch of extra points. Whereas you could have some scrub go against a good defense and score three FGs and have a great week.
Kickers value is very volatile from week to week. Pick the one you are going to start, drop the other, and then just have one bench spot where you have reserved for a long shot who will only have value if there's an injury. Then you won't feel bad when you have to drop him to pick up another kicker, Def, or TE for your bye weeks.
Defenses are another you don't need a permanent backup for. You've got a solid defense (KC's is pretty close to horrible). And then whenever that team has a bye, you can pick up a defense that's playing against Miami, Chicago, Arizona, etc. They'll put up a solid week, and you don't need to waste a permanent roster spot on a second defense.
