I have always felt that Curtis Martin is an underrated running backk. Part of the problem is he has never been a "big play" running back. He has always been steady but very rarely did he break off an 80 yarder. The guys in front of him had that ability. That being said, Martin will always hold a place in my heart for helping me win about 2 grand in a fantasy league a few years back.
As for Elway, in the 80's he had to be the guy because the team around him sucked. For all the hype of the Three Amigos, they were just average recievers. Plus, Sammy Winder was also just average. So, he was forced in all of those Super Bowls to try to play like God. In the 2 Bowls he won, he had a much better cast around him so he could play within the system and not throw into double coverage trying to make the big play. I hated the guy with a passion, but he was a great QB.
