maybe those slumming it in the food service industry can help me with this. Why are pasta dishes at pizza places or italian resteraunts so pricey when pasta is one of the cheapest things to make?
I dunno. Perhaps because you have to pay some guy to stand there and mix it. The pizza just gets popped into the oven to cook and it doesn't take as long.

pasta and sauce are cheap themselves
but when making ziti or lasagna you have a lot of prep work and cooking time
between boiling and the baking you're on the stove for almost 2 hours
so yer getting charged for gas
you're also using ricotta which isn't a cheap ingredient

not at pizza places, pizza is a lot cheaper and sells more. i rarely see people get pasta dishes at pizza places.
