well when you look at the mass production that hollywood is, 6 films isn't that many over the number of years they have been making these types of films. The other factor is these movies are targeted for both children and adults, thats also a contributing factor in them making so much money. In the end it goes back to the point of that so much time, money and effort is put in that only the best get made.
Also the stories themselves aren't really that groundbreaking, toy story was pretty good and incredibles was also very fresh. But they aren't so amazing like say se7en or usual suspects or memento. They are just done very well and are visually very asthetic.
