O&A Board Regular Registered: Oct. 00 | "Balsalmic Chicken" 2 pounds Boneless, skinless chicken breast cutlets pounded. 1 pound Shititake, Oyster, Cremini or domestic Mushrooms thick sliced 2 Tbs Flour 1 Tbs Olive oil 6-8 Cloves of Garlic 1/4 cup Balsalmic Vinegar 3/4 cup Chicken Broth 1/4 tsp Dried Thyme or 3 sprigs of fresh Thyme 1 Tbs Unsalted Margarine 1 Bay Leaf 1. Dust cutlets in Flour 2. Heat oil in lg. non0stick skilllet 3. Brown chicken on 1 side - about 3 minutes 4. turn chicken over and ad garlic and mushrooms and cook additional 3 min. 5. Add vinager, broth, bay leaf and thyme 6. cover pan and cook over low heat for 10 min. 7. remove chicken 8. cook sauce over med. heat uncovered for 7 min. until thickened. 9. remove from heat. Add margarine and contine to stirring. 10. pour over chix and serve to all your impressed friends! Enjoy! | ||||
